A packed collection of islands poking up in a series of bays along the coast of China, the former British colony has long been vital to global trade routes, and as a consequence has attracted merchants and money-makers for hundreds of years — and those seeking to both feed and entertain them. While the international community there is shrinking, centuries of cultures bumping up against each other makes Hong Kong one of the world’s most exciting places to eat, from dim sum and roasted meats to fresh seafood, perfect pastries, street food markets, tea houses… Since covid there’s no denying Hong Kong is sleepier than it once was, but it’s still one heck of a city.
